You are in for a treat if you love banana bread. I created this delicious and nutritious banana bread to be full of skin loving nutrients. Its so tasty that I can't stop eating it!
What I love the most about this banana bread is that you can't even tell that it's gluten free and sugar free. That makes it more enjoyable and healthier to eat all the time! Most recipes say that they are sugar free and then add some alternative "natural sweetener" but my recipe is only sweetened with bananas.
During the cooler months I find myself making this recipe every week because its just so good. You could say I've gone bananas for banana bread!

Ingredients
4 small/med very overripe bananas (Make sure the bananas are very ripe so they provide extra sweetness since this recipe does not have any added sugar.)
4 large eggs at room tempertaure (use organic pastured raised for the most nutrient dense eggs.
2 tsp pure vanilla extract
1/4 cup coconut oil melted and room temp
2 1/4 Gluten Free All Purpose Flour (I used the brand Cup for Cup)
1 cup chopped organic walnuts
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon (I like to use Ceylon cinnamon because its extra rich antioxidants)
*If you use the non toxic bakeware like I did then double the recipe and increase the cooking time by 30 min. Make sure its golden brown and a toothpick comes out clean.
Instructions
1.) Preheat oven to 350 degrees F
2.) Whisk together all wet ingredients in a bowl until well combined
3.) Slowly stir the dry mixture into the wet. You will want to do this by hand until there are no lumps. Do not use an electric mixer it will prevent the batter from rising properly.
4.) Pour mixture into greased baking dish.
I like to use grass fed butter to grease the dish.
5.) Let bake for 45 minutes until golden brown. Use a toothpick or fork to insert into the center of the loaf of bread to ensure it is fully baked. If it comes out clean with no wet batter it is ready to be removed from the oven. Allow to cool for a few minutes.
Have a slice or two!
Once its warmed up I like to spread a tiny bit of raw organic honey on it for a bit of extra sweetness and beauty benefits. Raw organic honey is so amazing for our health and skin hair and nails.
